Hello,

If you would like to learn how to safely can meat (including game), chicken and turkey then please check out the following post on my blog that has comprehensive directions and photos.

http://howlingduckranch.wordpress.com/2008/11/24/pressure-canning-meat-and-poultry/

I do this every year with my chicken, turkey and stewing beef. This year, I will also can my moose (should I be lucky enough to get one!) and goat. My hunting partners can their moose just like ground beef and use it for their spaghetti sauce! It is fantastic. This year, I'm the only one of us who drew and LEH for a moose, so wish me luck!

cheers,

HDR

This is great information! Thank you! I read your blog post about canning. I left a comment.
I am going to go back when I have more time and read your entire blog. Very interesting!

You can use all that fat you are throwing away to make your own soap.

I have decided to get a canner very soon. I have to build some sturdy shelving int he basement so I will have a place to put all the canned food.
